Chili lime baked salmon with pineapple salsa

We eat seafood a LOT. I’m guessing we do at least once a week, sometimes more. But, with so many amazing fish markets around it’s hard not to. The most popular fish in our house is salmon, unless you’re my son who is obsessed with crab cakes. I think he’d be satisfied with crab cakes and macaroni & cheese as his dinner everyday for eternity.

This salmon dish is SO good and the ingredients can be substituted a few different ways. If salmon isn’t your fav try it with some shrimp! I’ve also made this dish with both pineapple and mango salsa, usually whichever fruit my kids haven’t devoured and I still have in my fruit bowl. I’ve made a few tweaks each time I’ve made it but I think this spice rub is the best, mostly because I love all things Trader Joes.

Ingredients

Salmon

  • 1.5 lbs salmon
  • 2 TBS brown sugar
  • 2 TBS olive oil
  • 1 TBS Trader Joes Chili Lime seasoning
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
Glazed salmon

Pineapple salsa

  • 1 pineapple (or mango) diced
  • 1 avocado diced
  • 1/2 a red onion diced
  • 1 jalapeno pepper
  • juice & zest of one lime

Cilantro Lime Rice

  • 2 cups water
  • 1 cup white rice
  • 1 TBS olive oil
  • 1 bunch chopped cilantro
  • squeeze of lime juice
  1. Preheat oven to 450*
  2. Start your rice first, that way when it’s cooking you can begin everything else. Boil 2 cups of water and your olive oil then add in the rice. Cover and turn down to low continuing to stir so it doesn’t stick to the bottom of the pan, about 30 minutes. Once cooked, remove from heat and add in your cilantro and lime juice.
  3. Dice all the ingredients for the salsa, with the exception of your lime and zest and mix it in a bowl. Squeeze in the lime and grated zest then set aside until ready to plate.
  4. While your rice is cooking make the rub for your salmon. Place aluminum foil on your baking sheet and lay down your fish, skin side down. Mix your rub ingredients together and slather it on salmon. Once your oven is preheated place the salmon in and cook for approximately 10 minutes. The time is approximate because it can vary depending on the thickness of your salmon so just keep an eye on it. Also, brown sugar can burn at such a high temperature so watching the salmon with keep that from occurring as well.
  5. When everything is done, plate a scoop of rice down first and then top with the salsa and the salmon. Devour 🙂
