Easy to make lasagna

OhMyGoodness, any day now my best friend is due to have her first baby and I am so excited for her!!! I’m also pretty sure that if she has him on the day that I guess I get to pick his middle name (although I may or may not have embellished on the exact terms of the bet) I think technically her exact words were “you don’t actually win anything” but that’s still up for debate.

Anywho, since I love cooking and she’s very pregnant I offered to make her a few freezer meals to help get through those first few days home from the hospital! When I had my son we ended up admitted at the hospital for 5 days and I didn’t really eat very much, the food I did eat was just cafeteria and the vegetarian options were a little limited so when I got home all I wanted were some home cooked and veggie filled dinners. Luckily, I had planned ahead myself and read freezer meals were super helpful to have stored away! I cooked pretty much the same freezer meals when my daughter was born 22 months later because the thought of cooking anything with a newborn and not even 2 year old at home was going to be a transition enough for us all!

My favorite go-to freezer meal is definitely lasagna. I feel like you really can’t go wrong with a yummy lasagna, plus there are so many different ingredients you can add in, spinach, mushrooms, butternut squash, or I suppose even some ground beef.

Ingredients

  • box of lasagna noodles
  • jar favorite pasta sauce
  • ricotta cheese
  • mozzarella cheese
  • 1 egg
  • frozen spinach

Directions

  1. Boil water and add 1 TBS salt, once boiled add in your lasagna noodles and cook for 9 minutes
  2. Steam spinach until cooked and then drain out all excess water
  3. Mix together ricotta, most of the mozzarella cheese and the egg, set aside
  4. Spoon 1/2 the sauce into the bottom of the casserole dish and the layer the cooked lasagna noodles, some cheese mixture and spinach, add another layer of noodles and continue layering until all the cheese and spinach is used up
  5. Top with the remaining sauce and mozzarella cheese and place in the freezer!
  6. When ready to eat pop it into a preheated 350* oven for 50-60 minutes
