Pecan Snowball cookies
Take five very common pantry ingredients, add in 2 cups of minced pecans and what do you get? One of the most well know Christmas cookies around, snowball cookies! These scrumptious little bites are also referred to as “Mexican wedding cookies” but you don’t need a Holiday or a wedding to enjoy them! If you’re a fan of shortbread cookies these ones may be right up your alley.
Snowball cookies could always be found on the spread during Christmas at my Nanas house. Actually I’m pretty sure every type of cookie on the planet could be found there during Christmas, but these ones were always a crowd favorite. One of the great thing about this recipe is it’s no chill, and no spread so all you need to do is mix, spoon, bake and eat!
Pecan Snowball cookies
Prep Time: 10 minutes
Cookie Time: 25 minutes
Total Time: 35 minutes
Ingredients:
- 1 cup unsalted butter, softened
- ¼ cup granulated sugar
- 2 tsp vanilla
- 2 cups flour
- ½ tsp salt
- 2ish cups pecans, minced
Directions
- Preheat oven to 325 degrees Fahrenheit, similar to shortbread cookies these will be cooked at a lower temperature.
- Use your stand mixer to cream together the butter and sugar until fluffy, then add in the vanilla and mix it together again.
- Sift together flour and salt then pour and stir into the butter mixer.
- Use a wooden spoon to mix in pecans, you can use up to 2 cups, but use as much or as little as you’d like!
- Roll the dough into one inch balls and place them on an ungreased cookie sheet,
- Bake them for 22-25 minutes depending on your oven (mine are usually done around 23 minutes)
- One you take them out of the oven let them cool on a wire rack then roll them in powdered sugar
- Enjoy! and make sure you leave one for Santa!
