Broccoli Cheddar Soup

Did you know that broccoli cheddar soup is one of the only soups that has a cult like following? Okay, that may not be 100% true but I did used to work at Panera Bread in high school and it sure felt that way. While my broccoli cheddar isn’t quite like the Panera version, in my completely biased and untrained opinion it tastes just as good!

Since we’ve been undergoing a kitchen reno I’ve been trying to make some easy, one pot (or as close to one pot as possible) meals to limit the amount of dirty dishes, so this soup Sunday feast was actually pretty darn close. I also bought some already prepared veggies to help save on the additional prep I needed to do with my not so existent counter space.

This recipe is great in a Dutch oven, which is actually where I usually cook all my soups, it’s one of my favorite and most used piece of kitchen equipment we own.

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients:

  • 3 Tbsp butter (split)
  • 1 1/2 cups chopped carrots
  • 1 cup chopped celery 
  • 1 small chopped yellow onion
  • 2 cloves garlic , minced
  • 4 cups veggie broth
  • 3 cups russet potatoes (peeled & cubed)
  • 3 1/2 cups chopped broccoli florets 
  • Salt and freshly ground black pepper
  • 6 Tbsp all-purpose flour
  • 1 cups heavy cream
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese

Instructions:

  1. In your Dutch oven add the 1 TBS butter, carrots, celery, and onion and let cook for 7 minutes, then add in the garlic and cook another 2 minutes.
  2. Add the veggie broth and potatoes and bring the soup to a boil, then reduce the temperature to a simmer and add in the broccoli, and cook for 10ish minutes until all the veggies are tender
  3. In a small pan make a roux by melting the rest of your butter and then adding in flour, once you’ve browned the flower add the milk and heavy cream and stir together until the flour has all mixed into the liquid. Make sure you don’t let it over flow because burnt milk is a culinary disaster to try and clean off your stovetop.
  4. Add the soup and then cheese and stir everything together
  5. Spoon into a bowl and enjoy!
