We eat seafood a LOT. I’m guessing we do at least once a week, sometimes more. But, with so many amazing fish markets around it’s hard not to. The most popular fish in our house is salmon, unless you’re my son who is obsessed with crab cakes. This year was another great year for eggplants in our garden. We’ve been pretty successful with them in the past, but maybe being home everyday this summer made me appreciate all our vegetables a little more. Apple poptarts
One morning as we were trying to rush to get ready, I handed my son a poptart and oh boy, life has never been the same. At least once a week now he asks me for a poptart, and as much as I’d like to convince myself the “blueberry” on the inside is considered fruit, I know it’s not the best (albeit maybe easiest) breakfast to give him. Ice boats
Ice! What a fun sensory experience for kids. What is it about holding ice that they love? Who knows, but I’ll take it. These ice boats are cute but require a few hours to set up since, you know, it’s ice. About a year ago we upgraded our old fridge for a fancy one with built in water and ice machine (it’s the little things in life) so in order to make these boats I invested in a $2 ice cube tray. There is always something magical about laying in the grass during the summer and watching the clouds go by. I can remember that feeling as a kid myself after a day of playing outside.
