    Surviving a Kitchen renovation

    I can’t believe we made it but I can officially say that our kitchen renovation is finally DONE. Well, I guess technically we still need pendant lights, a chandelier, bar stools, decorations and countless miscellaneous items BUT our cabinets are installed, the countertops on and the sink is back-in-action and I am one happy Mummy.     (the worlds easiest) Sausage and pepper sheet pan dinner

    Sheet pan dinner’s are the best!! Anytime you’re looking for a quick, easy, mess free dinner I would totally advocate you try and make a sheet man dinner. They basically require no dirty pots and pans and (my favorite) limited effort for something that’s very delicious. This sheet pan dinner ended up becoming sausage and pepper subs which I enjoy, although you can probably tell that *spoiler alert* that’s not real sausage.     Broccoli Cheddar Soup

    Did you know that broccoli cheddar soup is one of the only soups that has a cult like following? Okay, that may not be 100% true but I did used to work at Panera Bread in high school and it sure felt that way.     Festive Fall Kale Salad

    Do you ever crave a veggie packed dinner? SAME, which make sense given I’ve been a vegetarian for 6 years. With Thanksgiving a week away I always try and figure out something for me to eat, mostly because my Aunt who usually hosts us all has enough to do, adding a “vegetarian friendly” dish isn’t something I want to burden her with.     OhMyGoodness, any day now my best friend is due to have her first baby and I am so excited for her!!!     Freezer meal número dos! And the good thing about this one is it’s even easier than the last one!     Here we are, meal three of four of my freezer meal dinners I made for my friend due tomorrow to have her first baby!! Thoughts on quinoa?     Today is the type national holiday I can really get behind!! It’s National Grilled Cheese day! So I decided to make my favorite grilled cheese ever. I l-o-v-e beets, everything about them really.     Cauliflower Steaks

    I never really ate much cauliflower until I became vegetarian, but I also never ate much steak, wasn’t ever a fan…so cauliflower + steak wouldn’t have been on my radar. Well, half of that statement has definitely changed and I now eat a whole mess of cauliflower and turning it into steaks might just be my favorite.
