    [Vegan 30 Minute] Italian Wedding Soup

    This past soup Sunday I was in need of an easy dish. We spent two straight days sledding, building snow men, having snow ball fights and every other snow activity a three and one year old can do.     We spent last weekend up in North Conway, NH and it was so fun! My lovely bestie has a condo up North and has been letting us use it for our family vacations during Covid time.     It’s Tuesday so you know we’re having some sort of South or Latin American cuisine! Tonight I made some empanadas and they were so good the whole family enjoyed them which always makes me happy! These only take 30 minutes because they are made with premade pie dough, which saves a lot of time for a busy fam!     We have a Nor’Easter hitting us this week so this soup Sunday I was craving something I’d want to eat to keep me warm in the middle of a snow storm.     I have to say, I really love artichokes, they are so delicious in so many forms. Baked stuffed artichokes though, really take the cake for me.     We love soup, which is why two years ago I started “Soup Sundays”. Every Sunday from mid December until March we have soup for dinner. Sounds crazy I know, but it really helps with my menu planning to know what we will be eating at least once a week, plus there are infinite possibilities when it comes to mustering up your soup recipes!     Chili lime baked salmon with pineapple salsa

    We eat seafood a LOT. I’m guessing we do at least once a week, sometimes more. But, with so many amazing fish markets around it’s hard not to. The most popular fish in our house is salmon, unless you’re my son who is obsessed with crab cakes.
